Hello, hello! Any meat lovers out there? I sure hope so, because I have a super simple meal idea to share with you, and the main ingredient is steak — yum! Well, actually, this is leftover steak, and I promise that this is actually a budget friendly meal. This Steak and Pepper Bowl features hearty slices of steak, cooked with red peppers and and onions and then served over a generous helping of brown rice. It’s a great way to use up leftover steak, and it only takes a few minutes to prepare.
I should explain that we very rarely have steak, and I mean very rarely — no pun intended! but when we do have steak, it’s a treat, and I try to get at least one leftover meal from the original dinner. We indulged a little bit on Valentine’s Day, and the family enjoyed steak with all the fixings! The key is to serve everyone a few slices of meat, along with plenty of sides. The younger ones like dipping the meat into loads of ketchup, but I’m not sure if that counts as a side!
So for leftovers, we had fajitas, and there was still enough meat left over to have these tasty steak and pepper bowls. And keep in mind that there are seven of us! Of course, you can skip the fajitas and just go directly to the bowls! Not only is this a great dinner idea, but it also makes a tasty and satisfying lunch. Your co-workers will be envious. And if you work from home, you can enjoy your steak bowl without feeling guilty.
Ingredients
- 3 cups cooked steak, cut into thin strips
- 2 red bell peppers, seeded and cut into strips
- 1 white or yellow onion, chopped
- 2 cloves garlic, peeled and chopped
- 1/2 tsp red pepper flakes
- 2 tablespoons olive oil or coconut oil
- 4 cups cooked rice
- Salt and pepper, to taste
Directions
Cut the meat into thin strips, and set aside.
Cut up onion and red peppers, toss into into a large frying pan, and cook in olive oil until soft.
Add the steak, red peppers, salt and pepper, and cook on low, until heated through.
Then, start the rice. I like using brown Minute Rice with quick recipes because I can cook this along with the meat and have everything ready at the same time.
Spoon rice into serving bowls, and top with steak mixture.
These steak and pepper bowls are completely easy peasy and chock-full of flavor. Plus, they make eating leftovers fun!
