Hi friends! It’s been a long time since I cooked for one person. There are seven of us, so I’ve been cooking for a crowd for a long time, and I’m completely used to it. But my oldest baby is away at college, and she’s been missing the food we have at home, especially the desserts. So, I’ve been experimenting with desserts that are simple enough for one person to make, like this Easy Apple Crisp in a Bowl. You can make it in the microwave, and in a few short minutes you’ll be enjoying a delicious fall treat that doesn’t take a lot of work!
I seem to remember eating a lot of ramen and pizza when I was in college, but our cafeteria cuisine was definitely nothing to write home about! My daughter has access to some pretty decent food, but still, I guess nothing really compares to home cooking.
I have a terrific recipe for a no-oat baked apple crisp, and I make this for the family every year. But I wanted to make a single serving of apple crisp that could easily be cooked in the microwave and did not require a lot of ingredients. Since my daughter doesn’t have any use for a bag of flour, I used a combo of crushed gingersnaps and vanilla wafers for the topping.
I figured that the other ingredients can be bought in single-serving and smaller sizes, and apples are usually pretty easy to find.
Ingredients for Easy Apple Crisp in a Bowl for One
- 1 Granny Smith Apple
- 1 teaspoon granulated sugar
- 1 teaspoon brown sugar
- 1/4 teaspoon ground cinnamon
- 1 tablespoon butter
- 2 or 3 vanilla wafer cookies or gingersnap cookies
Directions
Cook in the microwave for 1 to 2 minutes on high, or until the apples are soft. Exact time will depend on the size of the microwave.
Add the other ingredients, cook in the microwave, top with the cookies, and voila — apple crisp for one!
If you happen to have any ice cream, you should definitely add a generous scoop to the apple crisp because there’s nothing quite like vanilla ice cream melting over warm fruit! And if you don’t have any ice cream, you may need to locate your nearest market just so that you can be ready the next time you make the apple crisp for yourself.
Even though I had my daughter in mind when I made this apple crisp in a bowl, it would be perfect for anyone who wants a little taste of fall without a lot of work.
I made this about three times last week, and my other kids really enjoyed testing the recipe for me. They all gave it a big thumbs-up, even my picky teen, who isn’t a huge fan of fruity desserts. So if she likes it, I know it’s a winner. Now, the only person who has to try it is the college girl!

Oh no, I would be lost without an oven! And yes, ice cream makes everything better! 🙂
That sounds really yummy, Dee! This would be great for the two of us, especially since my oven is not working right now…..not a big priority until I want to make banana bread with all the over-ripe bananas I've been tossing in the freezer! I've made a few different single-serve desserts, and they would all taste better with Vanilla Bean ice cream on top!
