Hi friends! I have a quick and easy breakfast smoothie recipe to share today that’s perfect for both kids and adults. So, remember when I told you about our new blender? Well, that baby is working overtime right now, and we’re having tons of fun trying out different fruity combinations. 

The kids have been after me to make smoothies for breakfast, but I wanted a recipe that contained protein and wouldn’t take a lot of time to prepare. Have I mentioned I’m not a morning person? So, we did some experimenting and came up with this protein-packed Funky Monkey Breakfast Smoothie

My sweet middle child absolutely loves peanut butter, and she would honestly survive on peanut butter and jelly sandwiches if I let her. She prefers strawberry jelly, but sometimes she likes honey on the peanut butter instead. She also adores bananas, and on the weekends, she’ll sometimes add a banana to her sandwich.

So when I was making this smoothie, it occurred to me that it has all of her favorite foods. And when she was a baby, that little monkey tried to climb everything she could, so naturally, we had to name this breakfast smoothie the Funky Monkey.

She hates the name, but she does love the smoothie!


Ingredients

  • 3 ripe bananas
  • 1 pound of strawberries, washed and cut up
  • 1/2 cup peanut butter 
  • 1 1/2 cups milk (We use 2 percent)
  •  1/2 teaspoon honey
  • 2 cups ice


Directions


Add the strawberries to the blender, and then add the bananas.
Add the peanut butter, milk, honey, and top with the ice.
Blend or puree on high until all ingredients are completely mixed and the consistency is smooth.
Add more ice to the drinks if you like.
Enjoy!

We started out using 1 cup of milk, but it was still a little thick for us. The additional 1/2 cup of milk gave it just the right texture. If you like thicker smoothies, you may want to start off with less milk.

The honey is optional, but we found it helped mellow the peanut butter taste a little, and we liked it this way better. If you’re crazy about peanut butter, you can leave the honey out.

Oh, if you’re short on time in the mornings like we are, cutting up the strawberries the night before works really well. 

This way, we can enjoy our Funky Monkey breakfast smoothies and still make it out the door on time — yum!

    We go through bananas like crazy, so I need to start freezing them like you do. I can't believe it's almost Memorial Day – yikes!

    Thanks, Jaime. I use small glasses for the kids, so we get maybe 6 servings, but if you use a larger glass, 4 to 5 sounds about right. 🙂

    Perfect timing! I'm just trying to decide what to have for a late breakfast, and got all the ingredients, except for the strawberries unfortunately. Oh well, I'll just grab some other fruit I can find and toss it in. 😀
