One Bowl Pumpkin Muffin Recipe
You can never have too many pumpkin muffin recipes. So, I posted a recipe for easy pumpkin applesauce muffins not too long ago. They are so good, but my husband likes these buttery pumpkin muffins even better.
This easy recipe for pumpkin spice muffins from scratch is made with butter, instead of applesauce. It’s a little richer and also a little bit heavier on the spice, and it’s got some chocolate chips thrown in for extra goodness.
Plus, these homemade pumpkin muffins are made in one bowl, which makes cleaning up a whole lot easier. Okay, you do have to melt the butter, but still. Ingredients
Here are the ingredients you need to make these easy muffins. Full amounts are in the printable recipe card below.
- Canned Pumpkin Puree — Look for pure pumpkin and not pumpkin pie filling, as that will have extra ingredients you don’t need for this recipe.
- All purpose flour
- Butter — ads rich flavor. You can sub vegetable oil if you like.
- Eggs — large eggs
- Baking soda — to help the muffins rise
- Milk
- Brown sugar — for sweetness
- Vanilla extract — for flavor
- Spices — pumpkin pie spice, ground cinnamon, salt
- Chocolate chips — Chocolate makes everything better, but you can leave them out.
How to Make Pumpkin Spice Muffins
First, you add the eggs to a large bowl. Then, you whisk them up a little and add the dry ingredients on top. Give the dry ingredients a quick stir.
Add the pumpkin and wet ingredients. I use an electric hand mixer for mixing, but you could use a stand mixer or mix them up by hand.
Stir in the chocolate chips using a spatula. Then, spoon the batter into a greased muffin tin, and bake for. How simple is that?!
You can make a batch of one bowl pumpkin muffins on the weekend and enjoy them for an easy breakfast during the week. They’re also good for lunchboxes and as an after-school snack.
Storage
When the muffins are cool, store them in an airtight container at room temperature. They stay fresh for 4-5 days. To absorb excess moisture, I like to line the container with a paper towel. These muffins freeze well. Just pop them in a freezer bag, and they keep for about 3 months.
Recipe Tip
Look for a can of pure pumpkin and not pumpkin pie filling, as the added ingredients won’t work in this recipe. You can use homemade pumpkin puree if you like.
Pumpkin Spice Muffins
Ingredients
- 2 large eggs
- 2 cups all purpose flour
- 1 cup brown sugar
- 1 tsp baking soda
- ½ tsp salt
- 3 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- ⅓ cup butter melted
- ⅓ cup milk
- 1 15-ounce can pumpkin puree
- ⅓ cup semi sweet chocolate chips
Instructions
- Preheat the oven to 350℉
- In a large mixing bowl, beat the eggs slightly
- Add the flour, brown sugar, baking soda, salt, cinnamon and pumpkin pie spice, and stir to combine the mixture.
- Add the cooled, melted butter.
- Add the milk and pumpkin and thoroughly combine all the ingredients with a hand mixer
- Stir in the chocolate chips and pour the batter into a muffin pan greased with butter.
- Bake the muffins for 25-30 minutes or until a toothpick comes out clean.
