Hi friends! Who loves tomatoes? I know I do, but I especially love the taste of heirloom tomatoes, and whenever we stop by a local farmers market in the summer, I always make sure to bring a few home. Honestly, you can’t beat the flavor, and they taste especially wonderful in bacon, lettuce and tomato sandwiches! So the other night, I made this Heirloom Tomato BLT with Avocado Dressing — talk about a tasty quick and easy summer meal!

We usually have sandwiches for dinner at least once a week. Sometimes, these are sloppy Joes or grilled cheese, and other times, I let everyone just choose a favorite and make their own. The younger kids of course, chose the usual peanut butter and jelly, and I decided to use these gorgeous heirloom tomatoes in a kicked-up BLT, along with some homemade avocado buttermilk dressing.

I’m one of those people who likes to glam up sandwiches. I love trying different kinds of bread and experimenting with various flavor combos. I can’ t be the only one, right? 

The Hubs, on the other hand, would live on plain ham and cheese or grilled cheese if he could. But when he saw how good these heirloom tomato BLTs looked, he decided to have on too. He definitely was not disappointed!

And to make this summer meal even easier, I used leftover bacon. We usually make a big batch of bacon on the weekend so that there’s always some on hand when we need it. Gotta love that bacon! And instead of just using avocado slices, I whipped up some homemade avocado buttermilk dressing instead and used it in place of mayo.

Ingredients

  • 3 ripe heirloom tomatoes
  • 9 slices of cooked bacon
  • Romaine lettuce, washed and cut up
  • 6 slices of sourdough bread
  • Avocado buttermilk dressing, recipe found here


Directions

Wash and slice tomatoes.
Toast the bread, and spread a thin layer of dressing on each slice.
Pile on the bacon, lettuce and tomato slices, and top with additional dressing, if desired. 
Slice, and enjoy!

I used three different heirloom tomato varieties for these BLTs, and you can see how juicy and slightly messy they were. But, wow — they were amazing and definitely worth the mess! Anyway, like I tell my kiddos, that’s what napkins are for.

    This looks so yummy, Dee! Do you ever shop at Sprouts? I've gotten such good produce there, and when any product is in season and plentiful, they are very reasonably priced.

    Try to stay cool this weekend. The weather guessers were predicting some monsoon rain, but that guess seems to have fallen through…..lol!
