This Grilled Buffalo Chicken Sandwich Recipe is easy to make on the Ninja Foodi Grill or any indoor grill. Perfect game day food or a quick dinner anytime. These Buffalo Chicken sandwiches are delicious served with extra Buffalo sauce, Ranch dressing or blue cheese and topped with lettuce and your favorite cheese slices!

These delicious Buffalo grilled chicken sandwiches are a super easy meal. I love making them on my Ninja Foodi Grill XL, but you can make them on any indoor grill or regular outdoor grill.
You can also cook Buffalo chicken breasts in your air fryer, bake them in the oven or cook them on the stove top. This easy chicken recipe is very versatile!
Even though we love shredded Instant Pot Buffalo chicken sliders, those get messy! So, grilled chicken breast sandwiches are a great idea, especially for football season!

Ingredients
You only need a few simple ingredients for this grilled Buffalo chicken sandwich recipe. If you don’t already have everything at home, you can find these ingredients in your grocery store:
- Small boneless skinless chicken breasts
- Sea salt
- Ground black pepper
- Garlic powder
- Buffalo sauce like Frank’s Hot sauce
- Sandwich buns — We like soft brioche buns
- Ranch dressing — or blue cheese,
- Cheese and lettuce (optional)
How to Make a Buffalo Chicken Sandwich (Ninja Foodi Grill)
The key to quick grilling chicken is using thin boneless skinless chicken breasts. If you can’t find thin ones, you can either have the butcher cut some or slice them in half lengthwise.
You can also use a meat mallet to carefully pound the chicken breasts until they are thinner. Just place them in a large zip top freezer bag, and pound chicken lightly with the side of the mallet.
First, pat the chicken dry with paper towels. Season chicken with sea salt, black pepper and garlic powder.
Then, place chicken in a zip top freezer bag, a shallow dish, or on a large plate. Coat chicken with Buffalo sauce.
I usually do a quick marinade with sauce on a plate. Since the Ninja Foodi grill takes about 10 minutes to preheat, this is enough time for us.
You can marinate the chicken in Buffalo sauce longer if you want spicer chicken. Overnight is fine.
Preheat the grill to High heat, choose poultry and Well Done if you are using a Ninja Foodi smart grill.
When the indoor grill is ready, rub some avocado oil on the grill grate to avoid the chicken sticking. You can use vegetable oil or olive oil if you want.
Then, insert the temperature probe into the thickest part of one chicken breast. Place the chicken on the grill, and close the lid.
Make sure the chicken isn’t overlapping. I was taking pictures here, but I arranged the chicken evenly after taking the picture!
Cooking Time
Every indoor grill is different. But, the cook time is usually about 10 minutes on the Ninja Foodi Grill.
Grill chicken until the internal temperature is 165 to 170 degrees F.
You can flip the chicken over if you want about halfway through cooking. I usually don’t do this, though.
You can also brush some extra sauce on the chicken while it’s cooking. It depends upon how spicy you like your Buffalo chicken.
When the chicken is done cooking, it’s time to make the Buffalo chicken sandwiches!
First, I like to slather the top bun with either blue cheese dressing or ranch dressing, to keep the sandwich nice and moist. I like to use brioche buns and homemade ranch dressing.
Then, add whatever else you want to make your perfect chicken sandwich! Blue cheese crumbles, cheddar cheese, sour cream, green onions, extra buffalo wings sauce, dill pickles, Worcestershire sauce–feel free to customize your Buffalo sandwich however you see fit!
I usually stick with classic American cheese and a few pieces of crispy lettuce–simple but delicious!
What to Serve with Buffalo Chicken
We like to serve the Buffalo chicken sandwiches with carrot sticks and celery on the side. Don’t forget extra ranch for dipping!
You can also keep it easy with a side of potato chips. Or, whip up some frozen French fries or sweet potato fries in your air fryer!
Variations
You can make this delicious sandwich recipe in the Air Fryer or a conventional oven. Air fry the chicken at 390 degrees for 15 to 18 minutes. For baked Buffalo chicken, cook in the oven at 425 degrees on a baking sheet for 20 to 25 minutes.
Cook time will vary depending on the size and thickness of your chicken breasts, with thinner breasts taking less time, and on your appliances.
The chicken should be fully cooked when its internal temperature is between 160 and 170 degrees.
How to Store
Store any leftover buffalo chicken breasts you don’t use in an airtight container or freezer safe bag, and they’ll be good for a few days after you initially make them.
You can store them in a refrigerator or freezer.
For longer storage, you can freeze the chicken in a freezer safe bag. Or, you can also freeze uncooked marinated chicken in the freezer. Both are perfect for meal prep!

- 4 small boneless skinless chicken breasts about 1½ pounds
- ½ teaspoon sea salt
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- 1 cup Buffalo sauce like Frank's Red Hot
- 4 sandwich buns
- Ranch dressing, blue cheese, cheese and lettuce optional
Instructions
- Season the chicken with sea salt, pepper and garlic powder
- Marinate the chicken in Buffalo sauce
- Preheat grill to High heat, poultry. (If using Ninja Foodi Grill)
- Rub a little avocado oil on grill grate using a paper towel. Then, insert temperature probe (if model has one) in the thickest part of 1 chicken breast, and place evenly on grill grate
- Grill for about 10 minutes or until temperature is 165° to 170° degrees according to temperature probe or meat thermometer. Flip halfway if desired, and brush on additional sauce, if desired
- When done cooking, place 1 chicken breast on each sandwich bun. Top with sliced cheese, lettuce, ranch or blue cheese dressing and additional Buffalo sauce if desired
