An easy recipe for baked brie with jam wrapped in flaky puff pastry. This delicious appetizer is perfect for the holiday season and parties and sure to impress your guests!
Easy Baked Brie Recipe with Jam
We have been making this delicious recipe on Thanksgiving and Christmas for a few years now. Known as Brie en Croûte, or baked Brie in puff pastry, this easy holiday appetizer looks fancy, but it’s actually very simple to make!
Puff pastry comes in a box, and all you have to do is thaw it. You can roll it out slightly, wrap the brie in pastry and bake! Brie is a soft, mellow, buttery cheese. So, I like to add extra flavor by topping the Brie with jam — in this case, orange marmalade — and dried cranberries.

Ingredients
You only need a few simple ingredients for this classic appetizer. Full amounts are in the printable recipe card below.
- Wheel of Brie cheese — usually found with gourmet cheeses in the deli area
- Puff pastry dough — look for it in the freezer aisle. You can sub crescent roll dough if you can’t find the pastry sheets.
- Jam — I use orange marmalade
- Dried cranberries — you can sub a little bit of cranberry sauce if you like.
- Egg — for the egg wash, along with water
You will also need a rolling pin, baking sheet and parchment paper or foil
How to Make Baked Brie with Jam in Puff Pastry
The first thing you will need to do is let your puff pastry thaw. You can follow the directions on the box, but I usually put it into the fridge overnight so it is ready the next day.
Next, preheat the oven to 400 degrees f. Then, line a baking sheet with parchment paper.
Gently roll out the pastry sheet so that it’s even. You don’t have to roll it much. In fact, if you forget this step, just pat it carefully with your fingers until it’s soft and malleable.
Next, take the Brie out of it’s wrapping. You do not have to let it come to room temperature.
Can you eat the rind on Brie? Yes, you can! The rind is safe to eat, and becomes soft when baked — you won’t even know it’s there!
Place the wheel of cheese on the center of the sheet of puff pastry. Then, spread the marmalade over the top of the wheel of brie, and place dried cranberries on top of the jam.
Now, you can either fold up the edges of the dough. Or, you can quickly flip the cheese over so that the jam side is touching the pastry.
I’ve made this recipe both ways, and both are fine. The only difference is whether you want a smooth top or the folded layers of pastry on top.
This time, I chose to have the folded edges of the pastry on the bottom. So, I flipped the cheese over.
Press the edges of the dough together so that they form a loose seal. Now, turn the puff pastry-wrapped Brie over again, and place on the prepared baking sheet.
Use a pastry brush or silicone brush to apply the egg wash over the pastry. This is optional, but it adds color and shine to your dough.
Place the baking sheet into the preheated oven and bake for 25 to 30 minutes. The pastry crust should be flaky, firm and golden when done. If it’s still soft, it needs more baking time.
Every oven is different, so the pastry may take a little more time to bake. In my oven, 25 minutes is perfect!
Remove the baked cheese from the oven, and allow to rest for about 15 minutes or so before serving. If you slice the cheese too soon, it will gush out of the pastry shell like molten lava!
What to Serve with Brie en Croûte
For a truly stunning presentation, place the warm Brie on a serving platter or standard bread board.
Serve with your favorite crackers, pita chips, red grapes and baguette slices. Sliced apples pair well with the creamy cheese!
Use a sharp knife to cut into the pastry shell. Then, remove a small wedge of Brie. The melty cheese will flow gently onto the bread board, taking a few cranberries with it. Now, you’re ready to serve this cheesy party appetizer!
Variations
The easiest way to customize this recipe is by using different flavors of jam. Our favorite jam is orange marmalade — especially for the holidays. I love the hint of orange zest!
But raspberry jam, raspberry preserves, apricot jam, strawberry jam and strawberry jalapeno jam, and fig jam also work wonderfully and are perfect any time of the year.
Top the cheese wheel with whatever dried or fresh fruit you like, such as dried figs, fresh raspberries, or orange slices.
Sprinkle different nuts, maple syrup, or a drizzle of honey on top of the cheese.
If you don’t want the pastry shell, bake your brie in a small oven-safe dish, preferably a baking dish which is round.
Recipe Tip
Use mini cookie cutters and cut out shapes from excess pastry and use to decorate the dough before baking.
How to Store and Reheat
Make sure that the cheese is at room temperature or cooler before storing it in an airtight container.
The leftovers will keep for 3 to 4 days covered in the refrigerator.
To reheat, microwave on low power or bake in the oven until warm. The oven is the better option as the pastry will not get soggy.
Baked Brie with Jam
Ingredients
- 8 ounce wheel of Brie
- 1 sheet puff pastry
- ¼ cup orange marmalade
- ¼ cup dried cranberries
- 1 large egg
- 1 tablespoon water
Instructions
- Thaw the puff pastry according to package directions
- Preheat oven to 400℉
- Line a baking sheet with parchment paper
- Place the thawed puff pastry sheet on a flat surface and roll gently with rolling pin until even and soft
- Place the wheel of Brie on the center of puff pastry
- Spread orange marmalade over the top of the Brie, and top with dried cranberries
- Quickly flip Brie over so that marmalade side is touching the pastry. Gently fold the edges of puff pastry over the wheel of Brie, and press together to seal
- Flip the Brie over and place on prepared baking sheet so that smooth side is on top
- Crack an egg into a small bowl, and whisk in 1 tablespoon water with fork. Use pastry brush or silicone brush to apply egg wash over pastry
- Bake in preheated oven for 25 to 30 minutes or until pastry is golden and flaky
- Remove from oven and allow to rest for 15 minutes or so before serving
