Easy St Patrick’s Day Cookie Recipe
Celebrate Saint Patrick’s Day with this easy green cookie recipe! These green crinkle cookies start out with cake mix and Cool Whip and come together in no time. It’s such an easy dessert!
We have been making cake mix cookies for years, and they are the best! No rolling dough, cutting or frosting — just a simple, delicious cookie that even kids can make! Best of all, you get super soft cookies that practically melt in your mouth.

Simple Ingredients
You only need a few ingredients to make this easy St Patricks Day cookies recipe. Full amounts are in the printable recipe card below.
- Box cake mix — You can use white cake mix or yellow cake mix. Or use lemon cake mix for citrusy lemon-lime cookies.
- Cool Whip — Whipped topping takes the place of oil and makes these cookies super light and fluffy. Make sure it is thawed.
- Egg — Large egg
- Green food coloring — for adding green color to the cookies
- Powdered sugar — for rolling the cookies and making the crinkles
- Green sprinkles — optional, but adds a festive touch
How to Make Green Cookies for St Patrick’s Day
First, beat the egg slightly in a large bowl. Then, mix in the cake mix, Cool Whip and green food coloring. I use an electric mixer or hand mixer, but you can use a spatula, spoon or bowl of a stand mixer with paddle attachment.
Scoop up dough using a tablespoon or small cookie scoop and drop the dough balls into powdered sugar. The dough is very sticky, so sometimes it is easier to form the balls by rolling in powdered sugar until it is easy to handle.
Place the balls of dough on a baking sheet or lined with parchment paper or aluminum foil for easy clean-up. Keep the cookie dough balls spaced about 2 inches apart on the cookie sheet.
You can add sprinkles, but they don’t stick that well due to the powdered sugar. I usually add more right after baking while the cookies are still warm.
Baking Time
Crinkle cookies take about 10-12 minutes to bake. You can tell they are done when the edges are firm.
Storage
Allow the green crinkle cookies to cool completely. Then, store cookies in an airtight container at room temperature. They stay fresh for about 5 days. You can freeze the cookies in a freezer-safe container or freezer bag for up to 3 months.
Substitutions and Tips
You can sub 1/3 cup vegetable oil for the Cool Whip. Add white chocolate chips for a different flavor.
Drop the dough into the confectioners sugar, and then roll into a ball. You can chill the dough for a bit before handling if it is super sticky.
Don’t over bake the cookies. They will firm up as they cool down, and the middles will be slightly soft.

St. Patrick’s Day Cookies
Ingredients
- 1 15.25 oz box yellow cake mix any brand
- 1 8 oz tub of whipped topping thawed
- 1 large egg
- ¼ tsp green food coloring
- ½ cup Powdered sugar for rolling cookies
Instructions
- Preheat oven to 350℉
- Grease baking sheets or line with parchment paper or foil and set aside
- In a large mixing bowl, slightly beat the egg, and then add the cake mix and Cool Whip and food coloring, and mix well
- Use a tablespoon or small cookie scoop to drop small portions, about 1 inch balls, into powdered sugar. Roll in sugar until well coated
- Place cookie dough balls on prepared baking sheet, about 2 inches apart
- Bake for 10 minutes or until edges are firm but not brown
- Let cool, and enjoy
