Cotija Corn Avocado TRISCUIT Crackers are filled with the bold flavors of the Southwest and are perfect appetizers or snacks for any summer gathering.

We eat later in the summer, usually after 7. We love grilling, and it’s a lot cooler then. It also gives the kids a chance to go swimming when it’s not so hot and bright out. While I love that we don’t have a set schedule, I have to make sure that everyone gets a snack. Otherwise, people get cranky, tempers flare, and well, it’s just not fun — especially for me, the Mom Sheriff.
My kids love munching on crackers, preferably straight out of the box, which means we go through them like crazy. But I like to get a little more creative. So when I saw a recipe for TRISCUIT crackers topped with grilled corn, Cotijo cheese and avocado, I just had to try it out. The brand name is actually called Cotijacornocadoscuit — say that ten times in a row!
This may sound exotic, but it’s not. And, it’s actually super easy to make. Just think of it as Mexican street corn on a cracker!
Cotijo cheese is a Mexican cheese that’s kind of like a cross between feta and Parmesan. If you can’t find it, you can always substitute feta, instead.
I found everything I needed, including the cheese, at my local Fry’s .
Fry’s is part of Kroger, and what I love about Fry’s is that they carry just about everything, from fresh produce, to canned goods, to pool supplies, to gourmet cheeses and small appliances. They even have a full service bakery –yum!
Like I said, making the snacks is super easy, and I let my kids help. I just set out several crackers on a serving tray. Then, we topped those with avocado slices.
We had some grilled corn on the cob in the fridge, so I just cut off the kernels, heated them up, seasoned them with a little salt and pepper, and then I spooned a few over the avocado slices.
You can also use freshly grilled corn, or you can even pan fry some frozen or canned corn — whatever works!
How to Make Cotija Corn Avocado TRISCUIT Crackers
Cotija Corn Avocado TRISCUIT Crackers
Ingredients
- 24 TRISCIUT crackers
- 2 small avocados thinly sliced
- 1 cup grilled corn
- ½ cup Cotija cheese crumbled
- ½ lime
- Salt and pepper to taste
- Cilantro for garnish optional
Instructions
- Slice the kernels off of an ear of grilled corn, season with salt and pepper, and set aside
- Slice open avocados, scoop out onto a dish, squirt with lime juice, and slice thin
- Arrange crackers on a serving dish
- Add two small avocado slices to each cracker
- Top each cracker with small amounts of corn and Cotija cheese
- Garnish with chopped cilantro and fresh lime juice, if desired

After we added the crumbled cheese, I topped these savory little bites with chopped cilantro and a few squirts of lime juice. It’s totally optional, but I love the extra pop of color and flavor.
We had these savory Cotijacornocadoscuit crackers for appetizers in the afternoon, and they were filling enough to keep everyone happy until dinner. Even the picky eaters loved them!
