Hi friends! I think I’ve told you how much I love peaches, and I’ve already showed you several peach recipes this year. But there’s always room for one more, although this isn’t a dessert, so it’s different from the others. I first shared this Avocado Peach Salsa over at PinkWhen last month, but since it’s still peach season, I wanted to share it here, as well.
You can eat this salsa on it’s own or use it as a topping for chicken, burgers or even fish. It’s a very versatile dish, and it’s also incredibly delicious!
I used to think that salsas were all about the tomatoes, and so did the rest of the family. When I first suggested making this dish, my kids were more than a little skeptical. Actually, I think they thought their mom was a little nuts! They love to eat fresh peaches, and they love peachy desserts, so they couldn’t imagine how a fruit salsa would taste.
But you know what? They loved it!
This salsa mixes peaches with chunks of avocado, bits of red onion and a little bit of basil. Top it off with a honey-lime dressing, and you’ve got a completely delicious sweet and savory treat.
Ingredients for Avocado Peach Salsa
- 5 to 6 firm, ripe peaches, peeled and diced.
- 1 medium avocado, diced
- 1/4 cup red onions, thinly chopped
- 1 tablespoon honey
- Juice from half a lime
- 1 tablespoon chopped fresh basil leaves
- 1/4 teaspoon sea salt
Directions
The first time I made this salsa, I served it over grilled chicken, and everyone raved about it. So if you’re looking for a new way to eat chicken, you have to try this!
We used tortilla chips to scoop up the leftovers, and I even added some salsa to my salad.
I’m also thinking that this avocado peach salsa would be perfect to serve while watching football or while tailgating. And if you want, you could even toss in some diced jalapeno peppers for a little extra spice.
