I am a huge fan of easy recipes! Whenever I have a craving for homemade chocolate chip cookies but not a lot of time, I like to whip up some homemade chocolate chip cookie bars.

They don’t take as long as making cookies, but they taste just as good. Well, these lazy cookie bars are just as good as homemade and even easier to make!

Easy cake mix cookie bars are an easy dessert recipe. They’re perfect when you need to bring dessert to a potluck or bake sale and make a terrific for an after school snack or summer treat!

Ingredients

You only need a few simple ingredients for this yellow cake mix cookie bars recipe. If you don’t have these pantry staples at home, you can find them in grocery stores or online:

  • Butter — for richer flavor
  • Box yellow cake mix
  • Eggs
  • Ground cinnamon — adds flavor, but optional
  • Chocolate chips

First, preheat your oven to 350 degrees f. Then, prepare a 9 X 13 baking dish. You can use non stick cooking spray or line it with parchment paper.

I prefer parchment paper because it’s easy to lift the bars out for slicing.

Melt the butter in a large bowl in your microwave. Then, add the dry cake mix, cinnamon and eggs.

Mix the ingredients with a large spoon, rubber spatula or hand mixer. Then, stir in the chocolate chips.

The batter is very thick, but this is normal.

Pro tip — spray the spatula with non stick spray. This makes it easier to spread the cookies into the baking pan!

Pat the cookie dough so that it covers the bottom of the baking sheet. If you want, you can even use your hands for this part.

You can leave the bars alone or add candy, sprinkles or more chocolate chips. We topped ours with mini m and m chocolate candies and more chocolate chips!

Cooking Time

Place the bars into the preheated oven. Bake for 20 to 25 minutes or until a toothpick inserted into the center of the bars comes out mostly clean.

All ovens are different, so the total bake time may vary.

Allow the cookie bars to cool down until you can handle them. Then, gently pull up the parchment paper, and place on a wire rack or even surface.

Slice into bars while they’re still warm for a truly delicious treat! You can even top cake mix bar cookies with a scoop of vanilla ice cream for dessert!

My family thinks these are the best cookie bars ever!

How to Store

Store cookie bars in an airtight container or covered with plastic wrap. They can be left out at room temperature.

Cake mix bars last 4 to 5 days –if you can keep your hands off that long!

Yes, you can freeze these gooey cake bars! Allow to cool completely, then just wrap uncut bars in plastic wrap and place in a freezer bag. Freeze for up to 3 months for best taste.

Variations

There are a couple of different ways to customize these chewy cookie bars.

Vary the flavor of your cookie bars by using a different box of cake mix. Yellow cake mix, white cake mix, chocolate cake mix, red velvet cake mix, and strawberry cake mix are all great options!

Instead of semi sweet chocolate chips, use peanut butter chips, white chocolate chips, butterscotch chips, or leave them out entirely.

You can also try toffee bits, mint chips, and sprinkles. Of course, different cake mixes complement different toppings, so you can really add whatever you think is best for your bars!

You can substitute olive oil or vegetable oil for the butter.

  • ½ cup butter 1 stick
  • 15.25 oz box yellow cake mix
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • cups chocolate chips

Instructions 

  • Preheat oven to 350 degrees f
  • Line a 9 x 13 pan with parchment paper or spray with non stick spray
  • Melt butter in a large microwaveable bowl, and add cake mix, cinnamon and eggs
  • Mix until well combined. Stir in chocolate chips
  • Press cookie dough into prepared baking dish with a spatula until it covers the pan evenly
  • Bake for 20 to 25 minutes or until toothpick inserted into center of bars comes out mostly clean and not gooey
  • Remove from oven and allow to cool until able to handle. Gently lift parchment paper, and slice into bars or slice in baking dish

Notes

Top with extra chocolate chips or candies or sprinkles before baking, if desired.
Store in a covered container. Bars can be frozen for up to 3 months for best taste.
