With the cold weather we’ve been having the old Crock-Pot is definitely working overtime! I love using my slow cooker because it makes cooking so much easier, and it’s especially useful if you’re feeding a crowd. I’ve also been experimenting with different game-day recipes lately, or maybe I should say busy-day recipes in general. I made a batch of barbecue pork sliders in the Crock-Pot the other day, and not only did they taste great, but they were also so easy to make!

We always have pork roast on New Year’s Day, and this year, we cooked a 10 pounder in the Crock-Pot! It was a tight squeeze, but man, was it ever good! We try to buy all-natural pork from the local butcher whenever possible, and I really think it makes a difference in the taste. Needless to say, there was a ton of roast pork left over, so one afternoon, I made these easy pulled pork sliders and topped them off with homemade coleslaw and shredded cheese.

I just reheated about two pounds of the pork in the Crock-Pot and added about a half cup of barbecue sauce, a little bit of Dijon mustard and some water until the meat was well coated with sauce. Since some of the kids love to add more sauce to their sliders, I don’t add a ton of sauce, but it’s still well flavored. It’s funny, but I like to make my own sauce for grilling in the summer, but I usually just add some bottled sauce when I use the slow cooker. It’s just easier, I guess. There were already plenty of onions and garlic left from the original cooking.


Ingredients for pork sliders and coleslaw:

  • 2 pounds shredded pork in Crock-Pot
  • 1/2 cup barbecue sauce
  • 1/4 cup water
  • 1 tablespoon Dijon mustard
  • 1 yellow onion
  • 1 bag of shredded coleslaw mix (1 pound)
  • 1 cup mayonnaise
  • 2 tablespoons milk
  • 1 tablespoon ranch dressing
  • Sea salt and pepper, to taste
Directions

To make the coleslaw, I just mix everything together in a medium-sized bowl and refrigerate until we’re ready to eat. You can cut back on the mayo or add more to suit your taste.


To assemble the sliders, first shred the meat with two forks. Then, pile some meat on the bottom of a small deli roll and top it with shredded cheddar cheese and the coleslaw. Add, the top bun, and make as many of these little guys as you can. These are perfect for game day, parties or just a quick family meal.

I think the kids love the small size better, and these were gone in a flash!
