This easy ham casserole recipe combines ham, broccoli and pasta in a creamy cheese sauce for a quick meal the whole family will love. A delicious way to use up holiday leftovers!

Ham Noodle Casserole

This hearty ham and cheese casserole is one of my favorite ways to use up leftover ham from Christmas and Easter. This easy recipe features tender pieces of ham, egg noodles and broccoli in a creamy cheesy sauce.

It’s a simple meal that is easy to throw together, which is what you want after cooking a big holiday dinner! You can even make this easy one dish meal with deli ham — it’s perfect for busy weeknights!

Ingredient Notes

Here’s a quick rundown of the simple ingredients you need to make this comforting meal. Full amounts are in the printable recipe card below.

  • Ham — leftover ham or thick slices of ham from the deli or ham steak cut into bite-sized pieces
  • Egg noodles — or your favorite pasta
  • Cream of celery soup — or cream of chicken soup or cream of mushroom soup
  • Sour cream — Adds a tangy flavor and helps thicken the casserole
  • Milk — to help make the creamy sauce. Use whole milk or 2 percent
  • Dijon mustard — adds a little extra flavor
  • Seasonings — garlic powder, onion powder, smoked paprika, ground black pepper
  • Broccoli florets — I used fresh broccoli, but frozen broccoli works too
  • Cheese — cheddar cheese, Colby Jack cheese or cheddar blend

Optional — For extra flavor and texture, you can top it with panko breadcrumbs or crushed Ritz crackers or a similar cracker. I make this casserole with and without the cracker layer and it’s fine either way.

How to Make Ham Casserole

First, cook your pasta according to package instructions. Or, cook pasta in the Instant Pot. Spray a 13 x 9-inch baking dish or casserole dish with nonstick cooking spray. Then, add the cooked egg noodles to the dish. Add the condensed soup, milk, mustard, sour cream and seasonings to a medium bowl. Stir the milk mixture until well combined.

Add the cut up ham, broccoli and 2 cups of shredded cheese to the baking dish. Then, pour the milk mixture into the baking dish. Stir everything together until blended.

Add the remaining cheese on top. If you want to add a layer of panko breadcrumbs or crushed crackers, mix the crumbs with a little melted butter. Then, sprinkle them evenly over the cheese layer.

Bake for 30 minutes. When done, the casserole should be bubbling and the top layer should be a gorgeous golden brown.

How to Store and Reheat

Refrigerate leftovers in an airtight container. Or cover the baking dish with plastic wrap once it has cooled down. Leftovers should keep for up to 4 days. You can freeze the leftover casserole for up to 3 months. Reheat in the oven at 300 degrees until heat through or heat smaller portions in your microwave.

Recipe Tips

You can use your favorite vegetables in this creamy pasta dish. Frozen peas, corn or mixed vegetables all work well. Leftover green beans or asparagus are also good choices.

Use different cheeses. Monterey Jack cheese, white cheddar cheese or Swiss cheese pair well with the flavor of the ham and veggies.

Instead of ham, use cooked chicken or leftover turkey. Instead of noodles, you can use rice or instant rice.

Ingredients  

  • 12 oz egg noodles
  • 10 ½ oz cream of celery soup
  • 1 cup milk
  • ½ cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp ground black pepper
  • ½ tsp smoked paprika
  • 2 cups cooked ham cut into bite-sized pieces
  • 2 cups broccoli florets frozen or leftover cooked broccoli
  • 3 cups shredded cheddar cheese

Optional Crumb Layer

  • 12 Ritz crackers crushed
  • 2 tbsp butter, melted

Instructions 

  • Cook egg noodles according to package directions
  • Preheat oven to 350℉
  • In a medium bowl, mix the cream soup, milk, sour cream, Dijon mustard and spices until well combined
  • Spray a 9×13-inch baking dish with non stick cooking spray, and place cooked noodles on the bottom of baking dish
  • Add the ham, broccoli and 2 cups shredded cheese to the baking dish
  • Pour the sauce over the casserole, and mix well
  • Sprinkle the remaining cheese on top of the casserole
  • Mix the crushed crackers and melted butter in a small bowl. Sprinkle over the cheese layer
  • Bake for 30 minutes or until hot and bubbly and top layer is golden brown

Notes

You can use frozen veggies or any leftover vegetables in this casserole. If you want to use fresh broccoli, chop into very small pieces or cook until slightly soft before adding to the casserole.
You can use rice or instant rice in place of noodles.
