This million dollar chicken casserole recipe combines cooked chicken with a creamy sauce, cheese and a crispy topping. Easy comfort food the whole family will love and perfect for busy weeknights!

The Ultimate Chicken Casserole

This easy recipe is my take on our favorite million dollar dip. With layers of tender chicken, melty cheese, buttery cracker topping, crispy bacon and onions this easy chicken bake tastes like a million bucks!

What makes this such an easy dinner is you start out with rotisserie chicken. Just combine everything in a casserole dish, and bake. I add frozen peas to make this chicken dinner a one dish meal, and dinner is ready in 30 minutes. It’s a family favorite, and even my picky eaters love it! You can even serve million dollar fudge or million dollar cookies for dessert!

Ingredient Notes

Here’s an overview of what you need to make this million dollar chicken bake. Full amounts are in the printable recipe card below.

  • Rotisserie chicken — or leftover chicken. Cut it into bite size pieces.
  • Cream cheese — softened and cut into large cubes for easier mixing
  • Cream of chicken soup — helps make the sauce nice and creamy. You can sub cream of mushroom soup or cream of celery.
  • Sour cream — adds a nice tangy flavor to the sauce
  • Cottage cheese — adds a wonderful texture and extra protein
  • Seasoning — black pepper, garlic powder and onion powder for flavor
  • Frozen peas — sub frozen green beans or mixed veggies
  • Cheese — a blend of Monterey Jack cheese and cheddar cheese
  • Buttery round crackers — like Ritz crackers or a similar brand for the topping. Crush them up into fine crumbs.
  • Butter — melted butter combines with the crackers for the topping
  • Green onions — adds extra flavor
  • Bacon — crumbled for extra flavor. I use leftover bacon, but you can use bacon crumbles from the store.

How to Make Million Dollar Chicken Casserole

First, mix the cream cheese, canned soup, cottage cheese and sour cream in a large mixing bowl using a hand mixer. Then, mix in the seasonings.

Next, stir in the cooked chicken, and mix until well blended. Then, mix in the frozen peas — no need to thaw them. The mixture will be very thick.

Spoon the chicken mixture into a greased casserole dish, and spread evenly with a large spoon or spatula. Top the chicken layer with shredded cheese. Then, combine the melted butter and cracker crumbs in a small bowl, and sprinkle the crumbs on top of the cheese.

Bake in a preheated oven for about 30-40 minutes or until the dish is heated through and the topping is golden brown. Sprinkle the bacon crumbles and sliced green onions on top of the casserole, and you are ready to serve this delicious dish!

Storing Leftovers and Reheating

Store leftover casserole in an airtight container in your fridge for 3-4 days. Reheat individual portions in your microwave. You can freeze leftovers for up to 3 months for best flavor. If you are storing leftovers in the casserole dish and reheating in the oven, place the dish in the oven without preheating to avoid having the cold dish cracking.

Recipe Tip

You can use a 9×11 casserole dish or 9×13 baking dish. Cut recipe in half to use a smaller square baking dish.

If you don’t have cooked chicken, you can bake chicken breasts to use in this recipe. Freeze leftover cooked chicken to use in your next casserole!

Make Ahead Directions

It’s very easy to make this million dollar chicken recipe ahead of time. Add everything except the cracker layer to the baking dish, then cover and refrigerate until ready to bake. Add the cracker topping right before baking so it doesn’t get soggy.

Ingredients  

  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 8 oz cream cheese softened and cut into cubes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp ground black pepper
  • 5 cups cooked rotisserie chicken cut into bite sized pieces
  • 1 cup frozen peas unthawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Topping

  • 1 sleeve Buttery round crackers about 30, crushed
  • 4 tablespoons butter melted

Garnish

  • ¼ cup cooked, crumbled bacon
  • 2 sliced green onions

Instructions 

  • Preheat oven to 350℉, and grease a 9×11 casserole dish
  • Mix the cottage cheese, sour cream, cream of chicken soup and cream cheese in a large mixing bowl using an electric mixer until well combined
  • Mix in the garlic powder, onion powder and pepper
  • Stir in the chicken and frozen peas
  • Spread mixture evenly into prepared casserole dish
  • Top with shredded cheese
  • In a small bowl, combine the melted butter with the crushed crackers. Sprinkle the crumbs on top of the casserole
  • Bake for 30-40 minutes or until casserole is heated through and topping is golden brown
  • Garnish with bacon bits and sliced onions before serving

Notes

You can cook 4 medium chicken breasts if you don’t have leftover chicken or rotisserie chicken. Or cut recipe in half if you only 3-4 cups chicken to use, and bake in a smaller baking dish.
