Easy Monster Cookie Recipe

Monster cookies get their name from being a mish mash of several cookie recipes rolled into one delicious cookie. These chewy cookies have oats, peanut butter, chocolate and M&M’s. A lot of different flavors and textures, but is very easy to make. And even easier to eat!

We based this cookie recipe on our favorite oatmeal chocolate chip cookies. With just a few tweaks on those ingredients, we made what we consider the perfect cookie. Seriously! Ingredients

This is a quick overview of the ingredients you need. Full amounts are in the printable recipe card below.

  • Butter — I use salted butter, but unsalted butter works. Let it soften at room temperature so it’s easier to work with.
  • Peanut butter — I use creamy peanut butter, but crunchy will work although the texture will not be as soft.
  • Flour — all purpose flour
  • Oats — I use old-fashioned oats, but quick oats will also work.
  • Eggs — large eggs
  • Vanilla extract — for flavor
  • Baking soda — to help the dough rise
  • Cinnamon — adds delicious flavor, but you can omit it if you’re not a fan
  • Salt
  • Brown sugar and White sugar — for sweetness
  • Semi sweet chocolate chips — use your favorite flavor. Milk chocolate or dark chocolate also works
  • Mini M&M’s — I like miniature candies here, but you can use regular if you have them. Use different flavors like peanut butter m&m candy if you want!

How to Make Monster Cookies

First, measure the flour, baking soda, salt and cinnamon, add them to a medium mixing bowl, and stir together. In a separate large bowl, cream the butter until smooth. Then, add the peanut butter and mix until creamy. You will then mix in the sugars and vanilla and eggs.

After the wet ingredients are mixed, You gradually mix in the dry ingredients until well blended. Finally, stir in the oats, chocolate chips and mini m&m candies. Use a spatula for this part so you don’t break up any of the chocolate.

Use a cookie scoop or tablespoon to scoop out balls of cookie dough onto a parchment paper-lined baking sheet. Then, refrigerate the cookie dough balls for 15 minutes. Alternately, you can refrigerate the bowl of dough if you don’t have room for a cookie sheet in your fridge. I just think it works better to pop the whole sheet into the fridge.

Bake the cookies for 12-14 minutes or until the edges are firm and a light golden brown. You don’t want to over bake these cookies or they will be too crisp and not chewy!

How to Store the Cookies

Allow cookies to cool completely on a wire rack or cookie sheet. Then, transfer to an air tight container, and store at room temperature. They should stay soft for about 4-5 days. I usually throw a slice of bread in with the cookies to help them stay soft — this really works!

You can freeze the baked cookies for up to 3 months in a freezer bag or freezer safe container. If you want to freeze the dough balls, partially freeze them first on a baking sheet or plate. Then, pop the frozen dough into a freezer bag for up to 3 months.

Recipe Tips

Don’t over bake the cookies, or they won’t be as chewy.

Use a round cookie cutter or glass to swirl around freshly baked cookies for a perfectly round shape.

To keep the cookies nice and soft, place a slice of bread with the cookies when you store them!

Use holiday colors for the M&M’s at Christmas, Fall or Halloween.

Ingredients  

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • ยฝ teaspoon ground cinnamon
  • 1 cup butter softened
  • ยฝ cup creamy peanut butter
  • 1 cup firmly packed brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ยผ cups rolled oats
  • 1 ยผ cups semi sweet chocolate chips plus extra for the top
  • 1 cup mini m&ms plus extra for the top

Instructions 

  • In a medium mixing bowl, combine the flour, baking soda, sea salt and cinnamon. Mix well and set aside
  • In a large mixing bowl, beat 1 cup butter until creamy
  • Add peanut butter and beat until fully combined
  • Add brown sugar, granulated sugar and vanilla extract, and beat until creamy
  • Add eggs, and beat well. Gradually mix in the flour mixture and mix well
  • Stir in the oats, chocolate chips and mini m&ms, and mix until well combined
  • Using a cookie scoop (about 2 tablespoons full) scoop the cookie dough into balls. Set the dough balls on a prepared baking sheet and chill in the fridge for at least 15 minutes
  • In the meantime, preheat oven to 350 degrees
  • Set the chilled cookie dough balls on a prepared baking sheet, making sure they're at least 2 inches apart from each other
  • Top the cookie dough balls with extra chocolate chips and mini m&ms
  • Bake for 12 to 14 minutes, or until edges are lightly browned and semi firm
  • Remove from oven, allow to cool slightly, then transfer to wire rack or cool surface to cool completely

Notes

Don’t over bake cookies. Edges should be firm and golden brown. The middles may be a little soft, but they will harden as the cookies cool.
Swirl a large drinking glass or cookie cutter around the freshly baked cookies to make them perfectly round.
To keep cookies soft, store in airtight container with a piece of sandwich bread.
