These easy Polish Sausage Dogs are topped with plenty of golden brown onions and are loaded with flavor. They’re a tasty change from ordinary hot dogs and perfect when you want a no-fuss dinner the whole family will love.
Do you have a Portillo’s in your neck of the woods? It’s one of our favorite places to grab a quick bite to eat whenever we’re in the area, and I love their Chicago-style hot dogs, especially the Maxwell Street Polish. Maybe it’s because I grew up eating kielbasa, but I just love these things.
So when I was thinking about what to make for dinner the other day, I ย decided to make my own Polish-style hot dogs using smoked sausage. To be honest, I was looking for something that could be made without a lot of effort — something that was super quick and easy to make — and something different from the usual chicken and beef.
And these Polish dogs are definitely all that and more!

The only real work involved here is slicing up the onions. And if you want to make this recipe even easier, you can totally skip this part, but I don’t recommend it. Nope, no way. The onions are what makes these sausages so darn good, and unless you honestly can’t stand onions, go ahead and slice a couple of them up and toss them into the frying pan.
I like to give the onions a head start, so I let them cook and get slightly soft before I add the sausage. Then, they all finish cooking together. You can easily make this in in less than a half an hour, or you can turn down the heat and let them simmer.
And, you can use any brand of Polish sausage. If you buy pre-cut links, just place them over the onions. If you buy the rope sausage, cut them into bun-length pieces and then add them to the skillet. Since I needed enough for seven people, I used two packages, or eight links. But you can easily make less.
I also used two large onions. The hubs and I lik a lot of onions, and the kiddos like a little bit less. But again, you can make more if you need to.
How to Make Polish Sausage Dogs
Polish Sausage Dogs
Ingredients
- 8 Polish sausage links
- 2 large yellow onions peeled and thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 hot dog buns
- Mustard and ketchup for topping optional
Instructions
- In a large skillet, fry the onions in olive oil until slightly soft, and season with salt and pepper
- Add the sausages, and fry over medium heat, stirring often, until onions are golden brown and meat is cooked through
- Cover, turn heat to low, and keep warm until ready to eat
- Fill buns with sausage, top with onions, and serve with mustard and ketchup

Now, that is what I call a hot dog!
This isn’t a copy cat dish, and I didn’t try to make the hot dogs exactly like Portillo’s does. I even added a little bit of leftover cooked bacon for extra flavor. But, these tasted just as good.ย
No muss, no fuss — just a great family meal without a lot of effort. You can serve these Polish sausage dogs with chips, or heat up some frozen fries or onion rings to go along with them — whatever works best.
