- 2 tablespoons coconut oil
- 3 pounds ground turkey
- 1½ cups white rice jasmine or long grain, rinsed
- 1½ cups water
- 2 cups frozen carrots
- 2 cups frozen green beans
- 1 cup canned pumpkin puree optional
Hit Sauté on the Instant Pot, and when it reads Hot, add the coconut oil. Then, add the ground turkey
Cook the turkey, breaking up with a spatula, until it is fully cooked and no pink remains
Hit Cancel to turn the pot off. Add the rinsed rice over the turkey, and add the water. Press down with the spatula so that the rice is covered by the water. Don't stir!
Add the carrots and green beans over the rice.
Place the lid on the pressure cooker, make sure the valve is at sealing position (for some models) and hit PRESSURE COOK for 4 minutes
The pot will take a few minutes to reach pressure, then cook for 4 minutes. When the pot beeps, allow a 10 minute natural pressure release
After 10 minutes, do a quick release to release the remaining pressure. When the pin drops, carefully remove the lid. Turn the pot off, and stir everything together
Optional -- stir in pumpkin puree, if using. Allow to cool down before feeding
