Crockpot Chicken and Stuffing
This Crockpot Chicken and Stuffing recipe combines tender chicken breasts and boxed stuffing mix in the slow cooker for an easy weeknight meal. Delicious comfort food for the whole family!

- 1 tablespoon olive oil or cooking spray
- 4 boneless skinless chicken breasts about 2 pounds
- ½ cup low sodium chicken broth
- 1 tablespoon dried minced onions
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 1 10 ounce can cream of chicken soup or cream of celery soup
- ½ cup sour cream
- 1 package Stove Top Stuffing Mix 6 oz
- 4 tablespoons butter
- 2 stalks celery diced, optional
- ½ cup dried cranberries optional
Add olive oil and chicken breasts to slow cooker, add chicken broth, and season with pepper, garlic powder and dried minced onions
Spread cream of celery soup and sour cream over chicken breasts
Sprinkle dried stuffing mix over chicken. Add chopped celery and dried cranberries if desired. Place butter over stuffing
Cover and cook for 2-3 hours on high or 6-8 hours on low. Chicken should be 165℉ when fully cooked
For firmer stuffing, remove lid 30 minutes before serving to allow moisture to evaporate. Or, place dry paper towel between the lid and the slow cooker to absorb moisture 30 minutes before serving.
If stuffing seems to0 dry or for wetter stuffing, add 1/2 cup of chicken broth over stuffing.
Total cook time depends on how thick chicken is and how fast your slow cooker cooks. Chicken is done at 165 degrees.
