Dill Pickle Dip

- 8 oz cream cheese softened
- 1 cup sour cream
- 1 cup chopped dill pickles
- ¼ cup pickle juice from the jar
- ½ tsp garlic powder
- 1 tbsp chopped fresh dill
- salt and pepper, to taste if desired
In a medium mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy
Add the sour cream, and mix until well blended
Stir in the chopped pickles, juice and remaining ingredients with a large spoon. Mix until completely blended
Cover with plastic wrap and refrigerate for 1 hour or until ready to serve. Transfer to a serving bowl, and garnish with fresh pickle slices and chopped dill, if desired
The easiest way to chop whole pickles is to cut them lengthwise first. Then, chop the long slices into smaller pieces.
You can enjoy this dip right away, but the flavors develop the longer it sits. I recommend allowing it to sit for at least 1 hour before serving. It's even better the next day!
The flavor will vary with the kind of pickles you use. If you don't want a strong pickle flavor, I recommend starting out with 2 tablespoons of juice and adding up to 1/4 cup if you like. You can add more pickles, too.
