Million Dollar Chicken Casserole

This million dollar chicken casserole recipe combines cooked chicken with a creamy sauce, cheese and a crispy topping. Easy comfort food the whole family will love.

Ingredients

  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 8 oz cream cheese softened and cut into cubes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp ground black pepper
  • 5 cups cooked rotisserie chicken cut into bite sized pieces
  • 1 cup frozen peas unthawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Topping

  • 1 sleeve Buttery round crackers about 30, crushed
  • 4 tablespoons butter melted

Garnish

  • ¼ cup cooked, crumbled bacon
  • 2 sliced green onions

Instructions

  • Preheat oven to 350℉, and grease a 9x11 casserole dish
  • Mix the cottage cheese, sour cream, cream of chicken soup and cream cheese in a large mixing bowl using an electric mixer until well combined
  • Mix in the garlic powder, onion powder and pepper
  • Stir in the chicken and frozen peas
  • Spread mixture evenly into prepared casserole dish
  • Top with shredded cheese
  • In a small bowl, combine the melted butter with the crushed crackers. Sprinkle the crumbs on top of the casserole
  • Bake for 30-40 minutes or until casserole is heated through and topping is golden brown
  • Garnish with bacon bits and sliced onions before serving

Notes

You can cook 4 medium chicken breasts if you don't have leftover chicken or rotisserie chicken. Or cut recipe in half if you only 3-4 cups chicken to use, and bake in a smaller baking dish.
