For the Cookies
- 1 box chocolate cake mix
- 2 eggs
- ⅓ cup coconut oil or vegetable oil or melted butter
- 2 teaspoons milk
For the Cookie Ice Cream Sandwiches
- 12 chocolate cake mix cookies
- 6 scoops Mint Chocolate Chip Ice Cream
- 1 cup semi sweet chocolate chips
- 2 tablespoons butter
- Candy sprinkles
For the Cookies
Mix all ingredients in a large mixing bowl
Scoop tablespoon-sized balls of dough and place on ungreased cookie sheet
Bake at 350 degrees for 8 to 10 min
allow to cool completely
For the Sandwiches
Assemble sandwiches, and place in freezer for about 10 minutes to firm up
Melt chocolate chips and butter in microwave for 30 seconds, and stir
Melt for additional 10 seconds until fully melted and glossy
Dip half of each sandwich into melted chocolate
Top with candy sprinkles, and store in freezer until ready to eat
Dipped cookies are optional. You can serve cookie sandwiches as is or use magic shell topping for easier dipping.
Wrap cookie sandwiches in freezer paper or plastic wrap for longer storage.
