Pumpkin Chocolate Chip Cookies
Make Pumpkin Chocolate Chip Cookies with spice cake mix and pumpkin puree! These cake mix cookies are soft, cakey and perfect for fall baking. Best of all, you only need 5 ingredients to make them!

- 1 box spice cake mix
- ½ cup canned pumpkin not pumpkin pie filing
- 2 teaspoons pumpkin spice flavored creamer or milk
- 1 egg
- 1 cup semi sweet chocolate chips
Preheat oven to 350 degrees
Line a baking sheet with parchment paper or aluminum foil or use a silicone cookie sheet
In a large mixing bowl, add the egg, and beat slightly
Stir in the cake mix, pumpkin and coffee creamer, and mix until well combined and smooth
Stir in the chocolate chips
Drop by rounded tablespoonfuls onto an ungreased baking sheet
Bake for 12 minutes or until edges are firm
Remove from oven, allow to cool slightly, then cool completely on wire rack
You can use yellow cake mix and 1 tablespoon of pumpkin pie seasoning if you can't find spice cake mix.
All ovens are different, and cookie can take between 10 to 15 minutes. Edges should be firm and centers soft but not too soft.
