Watermelon Salad with Cucumber and Goat Cheese
Watermelon Salad is a refreshing salad made with juicy watermelon cubes, crisp cucumbers and goat cheese in a simple homemade dressing. The perfect side dish for hot summer days!

- 5 cups watermelon cubed and seeded
- 1 medium English cucumber sliced into half moons
Dressing
- ⅓ cup olive oil
- 2 tbsps red wine vinegar
- 1 tbsp lemon juice
- 1½ tsps honey
- ¼ tsp Dijon mustard
- 1 tsp sea salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ⅓ tsp dried parsley
- pinch red pepper flakes
Add the watermelon and cucumbers to a large mixing bowl
In a small bowl, whisk the dressing ingredients together until well blended
Pour a small amount of dressing over the watermelon and cucumbers, and toss to coat. Reserve the remaining dressing to serve with the salad
Top with grated goat cheese when serving
Store salad in airtight container in fridge. If making ahead of time, add the goat cheese when serving.
You can sub feta cheese for the goat cheese and use store-bought dressing, if desired.
